Sausage and Chicken Gumbo
Makes 6 Servings
1 Tablespoon Canola Oil
1 Red Bell Pepper, Chopped
1 Pound Boneless, Skinless Chicken Thighs, Trimmed and Cut Into 1-Inch Pieces
1 Package (12 ounces) Cajun Andouille or Spicy Chicken Sausage, Sliced 1/2 Inch Thick
1/2 Cup Chicken Broth
1 Can (28 Ounces) Crushed Tomatoes with Roasted Garlic
1/4 Cup Finely Chopped Green Onions
1 Bay Leaf
1/2 Teaspoon Dried Basil
1/2 Teaspoon Black Pepper
1/4 to 1/2 Teaspoon Red Pepper Flakes
6 Lemon Wedges (optional)
1. Heat oil in large saucepan over medium-high heat. Add bell pepper; cook and stir 2 to 3 minutes. Add chicken; cook and stir about 2 minutes or until browned. Add sausage; cook and stir 2 minutes or until browned. Add broth; scrape up browned bits from bottom of saucepan.
2. Add tomatoes, green onions, bay leaf, basil, black pepper and red pepper flakes. Simmer 15 Minutes. Remove and discard bay leaf. Garnish each serving with lemon wedge, if desired.
