Egg White Salad Cucumber Boats
Makes 2 Servings
6 Hard-Cooked eggs, peeled
⅓ Cup of Mayonnaise
Juice of 1 Lemon
1 Teaspoon Chopped Fresh Dill
¼ Teaspoon Salt
¼ Cup Finely Chopped Green Bell Pepper
¼ Cup Finely Chopped Red Onion
1 English Cucumber
Slice eggs in half lengthwise; discard yolks. Finely grate or chop whites
Whisk mayonnaise, lemon juice, 1 teaspoon dill and salt in medium bowl. Gently stir in egg whites, bell peppers and onion.
Cut cucumber in half crosswise;cut each piece in half lengthwise to make 4 equal pieces. Scoop out cucumber pieces with rounded ½ teaspoon, leaving thick shell. Fill each shell evenly with egg salad.
