1/4 Head Green Cabbage, Shredded or Thinly Sliced
1/4 Head Red Cabbage, Shredded or Thinly Sliced
1 Small Yellow or Orange Bell Pepper, Thinly Sliced
1 Small Jicama, Peeled and Julienned
1/4 Cup Thinly Sliced Green Onion
2 Tablespoons Chopped Fresh Cilantro
1/4 cup Vegetable Oil
1/4 Cup Fresh Lime Juice
1 Teaspoon Salt
1/8 Teaspoon Black Pepper
1. Combine cabbage, bell pepper, jicama, green onions and cilantro in large bowl.
2. Whisk oil, lime juice, salt and black pepper in small bowl until well blended. pour over vegetables; toss to coat. Cover and refrigerate 2 to 6 hours for flavors to blend.
