2 Tablespoons Butter, Divided
1 Cup Finely Chopped Yellow Onion
1 Package Fresh Spinach Leaves
3 Ounces Cream Cheese, Diced
1/2 Teaspoon Garlic powder
1/4 Teaspoon Ground Nutmeg
1/4 Teaspoon Black Pepper
1/8 Teaspoon Salt
2 Tablespoons Grated Parmesan, Pecorino or Monterey Jack Cheese
1. Melt 1 tablespoon butter in large skillet over medium-high heat. Add onion; cook and stir 4 minutes or until translucent.
2. Add half spinach; cook and stir 2 minutes or just until wilted. Transfer to medium bowl. Repeat with remaining 1 tablespoon butter and spinach.
3. Add reserved spinach to skillet. Add cream cheese, garlic powder, nutmeg, pepper and salt; cook and stir until cheese has completely melted. Sprinkle with Parmesan cheese; serve immediately.
