Non stick cooking spray or 2 teaspoons olive oil
2 Ounces (about 1/2 cup) Diced Ham
1 Small Onion, Diced
1/2 Medium Green Bell Pepper, Diced
1/2 Medium Red Bell Pepper, Diced
2 Cloves Garlic, Minced
6 Eggs, Lightly Beaten
1/8 Teaspoon Black Pepper
1/2 Cup Shredded Reduced- Fat Colby Cheese, Divided
1 Medium Tomato, Chopped
1. Spray large skillet with cooking spray or place oil in skillet; heat over medium-high heat. Add ham, onion, bell peppers and garlic; cook and stir 5 minutes or until vegetables are crisp-tender. Transfer mixture to large bowl.
2.Wipe out skillet with paper towel; spray with cooking spray. Heat over medium-high heat. Pour egg into skillet; sprinkle with black pepper. Cook 2 minutes or until bottom is set, lifting edge of egg with spatula to allow uncooked portion to flow underneath. Reduce heat to medium-low; cover and cook 4 minutes or until top is set.
3. Gently slide omelet onto large serving plate; spoon ham mixture down the center. Sprinkle with 1/4 cup of cheese. Carefully fold two sides of omelet over ham mixture; sprinkle with remaining 1/4 cup cheese and tomato. Cut in 4 pieces; serve immediately.
