2 Heads Cauliflower (8 Cups of Florets)
1 Tablespoon Butter
1 Tablespoon Half-and-Half, Whole Milk or Buttermilk
1. Break cauliflower into equal-size florets. Place in large saucepan; add about 2 inches of water. Simmer over medium heat 20 to 25 minutes or until cauliflower is very tender and falling apart. Add water if necessary. Drain well.
2. Place cooked cauliflower in food processor or blender. Process until almost smooth. Add butter. Process until smooth, adding cream as needed to reach desired consistency. Season with salt to taste.
