Salmon with Bok Choy
Makes 4 Servings
4 Skinless Salmon Fillets (about 4 Ounces Each)
3 Tablespoons Finely Chopped Fresh Ginger
2 Cloves of Garlic, Minced
1/2 Cup Reduced- Sodium Vegetable Broth
3 Tablespoons Unseasoned Rice Vinegar
1 Tablespoon Reduced-Sodium Soy Sauce
6 Cups Chopped Bok Choy
1 Teaspoon Hoisin Sauce
1/4 Cup Sliced Green Onions
Slow Cooker Directions
1. Spray slow cooker with nonstick cooking spray. Arrange salmon in slow cooker; spread ginger and garlic evenly over salmon. Pour broth, vinegar and soy sauce over salmon. Cover; cook on LOW 1 1/2 hours.
2. Add bok choy to slow cooker; cover and cook 30 minutes or until crisp-tender and salmon flakes easily when tested with fork.
3. Remove salmon from slow cooker; arrange on 4 plates. Stir hoisin sauce into liquid in slow cooker.
4. Spoon sauce evenly over salmon. Top with green onions. Serve with bok choy.
